    Built on a base of Pilsner, Wheat, Malted Oat and Munich and hopped judiciously with Amarillo, Cascade, and Simcoe Cryo. Made to bridge the gap between West Coast and Hazy, with a firm but not overwhelming bitterness and a bright hop profile. Notes of late season apricot, peach marmalade and floral, sun-ripened oranges.

    Brewed with North American Pils malt and rice, to keep the body light. Hopped with two lots of Nelson in the kettle alongside Simcoe Cryo. Dry Hopped with experimental Nelson “Bliss” Sauvin. Fermented with clean lager yeast.

    This beer began as two different threads. One thread a hefty Imperial Stout and the other a big sticky Barleywine. We matured them in Buffalo Trace and Jefferson’s barrels and then finished it on our favorite Madagascan vanilla.

    It is rare that a single barrel exhibits enough character to be released on its own. This Heaven Hill barrel shines with impressions of decadent caramel, vanilla laden oak and toasted coconut. Without any of the aforementioned ingredients being added.

    This beauty combines Maris Otter, Crystal, Chocolate and Roast malts to bring forward impressions of toasty and warm cacao/dark chocolate with a balanced and smooth roast profile. The measured addition of Columbus hops provides the necessary spicy, herbal bitterness coaxing additional sips until the foamy lacing reaches the bottom of the glass. A creamy dense mouthfeel and clean, dry finish of bittersweet cacao, bakers chocolate and a touch of caramel makes this one of our near and dear favorites.

    Witbier brewed with Coriander, Orange Peel, and Secret Spice. Sturdy malt base of pale, wheat, and fluffy oats for a luscious, soft mouthfeel. Combo of Columbus and noble Czech Saaz. Fermented judiciously with Hoegaarden Wit Yeast. Expect lovely impressions of doughy wheat, subtle orange, spicy phenols, capped off with a fresh herbal finish.

    Two choice lots of Mosaic and Citra. Beautifully dry pale ale that is justly bittered with a medium body and crisp finish. Notes of ripe orchard fruit, cannabis resin, and fuzzy citrus. Full of fresh cut orange and citrus, gooey mango cannabis, ripe orchard fruits and blueberry pine.

    An homage to my little girl ZoZo, on her first birthday. Inspired by an all time favorite beer, Orval Vert. Available only at the Monastery grounds in Belgium. We had to brew it ourselves to transport us back. Starting life as a Belgian-style Blonde this beer was fermented in stainless and then secondary fermented in neutral French Oak on a classic blend of yeast and bacteria. After an extended aging on wood we added fresh yeast to produce natural carbonation in both bottles and kegs and enough food for the yeast and bacteria to chew on for years to come. We aged these bottles for nearly a year after its bottling date to slowly let the character develop and the Brettanomyces make its impact on the beer.

MEAD

    It’s our pleasure to release to you another barrel aged delight from last seasons bountiful harvest. Cyser is a co-ferment of locally grown and pressed apples as well as Orange Blossom honey. After fermentation we conditioned this at length in Two James Rye Whiskey barrels. During its long slumber it took on a ton of character from the rye, as well as beneficial micro oxidation from the minutely porous wood. Expect impressions of spicy caramel green apples, bright lemon zest and with an herbaceous zing. Like nearly all of our cider and cyser, this finishes nice and dry with a spritely carbonation profile.

WINE

    Old Mission Red. 90% Dornfelder, 10% Blaufrankisch, Old Mission Peninsula grapes. Deep dark color, medium body and low tannin red wine accenting intense fruit and gentle chocolate from the old oak barrel aging tones. Aged for 12 months in French Oak.
