Native to Brazil, the Cerejeira oak (Amburana) is an incredibly aromatic wood with the scent of vanilla and sweet cinnamon spice. Traditionally used for aging Cachaca, we thought it would be the perfect accompaniment to a warm and toasty little base beer like the mild. It provided a ton of depth in character from the contact, we’re quite surprised with the results. Did we add cinnamon, no we did not :) Yielding notes of cinnamon horchata, sugar cookies in the oven, baking spice and sticks of chocolate toffee

The cacao nibs take the chocolate to a whole other level. Big hits of milk chocolate, Irish coffee, caramel and toasty oak. The beans were sourced from fair trade farmers focused on fermenting better beans as a means to escape commodity production and become premium producers. Their nibs are beautiful, and we’re happy to put them in a beer that’s near and dear to our hearts.

Made with local malted barley and wheat from Empire. As well as heaping buckets of sticky Oats. Hopped abundantly in the kettle with CZ Saaz. Fermented with saison yeast. Dry hopped with Amarillo. Notes of freshly proofed sourdough bread, white cracker, froot loop bubblegum and spicy herbs. Light bodied, dry, with snappy carbonation.

Brewed in collaboration with home-brew competition winners Keith, Martin and Dan. Made with a blend of Belgian and local malted barley and wheat. Fermented with classic abbey ale yeast. Conditioned on a humongous amount of whole raspberries. Bright, floral and jammy aroma of freshly plucked raspberries. Underlying abbey yeast ester. Finishing with a tangy raspberry derived acidity and a dry, prickly effervescence. *contains wheat

5.5% Czech style dark lager. Recipe from homebrew contest winner Ken Cleary. Mashed with a toasty base of Vienna and Munich Malt. Layered carefully with Carafa, caramel and specialty roasted malts. Balanced in the kettle with classic Saaz hops. Fermented with our house lager yeast. Krausened and lagered for what seemed like an eternity. Impressions of your favorite cherry cola and perfectly toasted raisin bread. A deceptively smooth and balanced dark lager.

The goal for this iteration was to explore a new dry hopping process than is typical for us. One where we dry hop at a much cooler temperature, with the goal of extracting more bright and fruity hop oil compounds while minimizing green, polyphenol, astringent flavors you can pull when temperatures are higher. Fresh, punchy hop character full of tangerine pine, diesel driven sauvignon blanc and tropical fruit resin. We aimed for the line of bitter and dry where New England and west coast IPA converge. Our modern interpretation of “American IPA”.
